Encourage & Engage Dinner Series 2023
This dinner series is a mentoring and team building exercise for our talented staff. These intimate but casual dinners will bring you face to face with the people behind your favorite dishes.
With the supervision and help from our executive Chef, Cortney Carpenter, our culinarians are creating their own three course world cuisine inspired menus. For each event, our cooks work alongsideour bartenders to create cocktailsthat pair well with the dishes they have chosen. Not only is this an activity centeredon creativity, it’s also a learning opportunity. Each cook will learn how to write a recipe and then costit out. They will oversee sourcing their ingredients from our many local vendors. We will also take a deep dive into the costof goods and what it takes to make a profitable and delicious dish!
The goal is to send inspired and knowledgeable chefs into the city to be a part of the amazing culinary scene in Fort Wayne.
Traditional Caprese Salad with fresh basil, mozzarella, balsamic, sea salt, and heirloom tomatoes.
Chicken Piccata over linguine with lemons and capers.
Sweet Cream Cannolis with chocolate sauce and whipped cream.
